If I had the money, this would be my choice.
Specs: 3 degrees of freedom
2g acceleration vertically
+/- 30° pitch/roll
51.5" projection displayForce-Dynamics Motion Simulator (http://www.force-dynamics.com/)

They have some nice videos of the rig in action. Watch them, they're worth it.
I got there by accident while searching something for Richard Burns Rally (the most realistic rally sim I know, better than Colin McRae). One of the videos is a ride with Richard Burns Rally sim in the 301 rig.
Get the videos here (http://www.force-dynamics.com/video.html).
1. At the end of the video, the car ends up upside down, but obviously the simulator can't go quite that far. What you see is its best approximation of car position.
2. Constant acceleration forces (cornering, braking, acceleration) may seem a little toned down - for this video we ran the same force scale we normally do for GTP and Trans Am. There's only so much acceleration force you can generate on gravel!
3. No, there's no handbrake. We just don't have one in there at the moment, since we just got RBR support put in recently. This doesn't mean you can't get a 301 with a handbrake![/b]
Sounds like an answer to flight simmer's prayers :D
